2 pkg (250 g each) Tilda® Steamed Basmati Rice
1 pkg (240 g) Yves® Falafel Bites
2 tbsp (30 mL) olive oil, divided
1 pkg (400 g) Europe’s Best® Roasted Gourmet Tuscan Inspired Vegetable Blend, thawed
1 cup (250 mL) halved cherry tomatoes
2 tbsp (30 mL) tahini paste
1/4 cup (60 mL) lemon juice
1 clove garlic, minced
1/2 tsp (2 mL) salt
1/4 tsp (1 mL) each ground cumin, coriander and pepper
1/4 cup (60 mL) chopped fresh cilantro
1. Cook rice and falafel bites according to package directions.
2. Meanwhile, heat half of the oil in large nonstick skillet set over medium-high heat; cook vegetables for 5 to 8 minutes or until heated through. Toss in cherry tomatoes.
3. Add tahini to small bowl; gradually whisk in lemon juice and 1 tbsp (15 mL) water until smooth. Stir in remaining oil, garlic, salt, cumin, coriander and pepper.
4. Divide rice evenly among 4 bowls. Top with vegetable mixture and falafel bites. Drizzle with tahini-lemon dressing. Sprinkle with cilantro.
